Perishable News covers the report release as well, stating that our study indicates a growing openness to animal-free dairy products, with research showing 80% of interested consumers are actually omnivores! The study found that 4 in 5 consumers are willing to buy this alternative cheese, with early adopters showing a 97% purchase intent. The findings highlight the increasing market potential for animal-free dairy products that closely match traditional taste and texture. New Culture's animal-free mozzarella replicates traditional cheese qualities using precision fermentation, and some other publications take a closer look.

 

Taking a Look at the Cheese

Interest in New Culture’s product by the press goes beyond the release of the new report though—with The Plant Based magazine digging into the science behind the cheese. The article, “Putting melty, stretchy cheese alternatives on the menu,” talks about how traditional dairy-based cheeses owe their meltability and stretchability to casein, a key protein found in milk. However, plant-based cheeses often lack casein, resulting in a different texture and melting behavior. New Culture is one of the start-ups out there successfully exploring innovative approaches, such as precision fermentation, to produce casein without using cow's milk.
